Ingredients
For the pasta (1 person):
- about 100 g of cucumbers or
- about 100 g of zucchini
- or a mixture of both
Sauce:
- about 20 g of sesame seeds
- 1 or more bell peppers (yellow or red)
- 1 or more tomatos
- 1 avocado

- peel the cucumber and/or the zucchini. This step is optional, if you have homegrown crops, there’s no need to peel these vegetables;
- slice to make noodles, either with a peeler or with a raw noodle maker. No worries if you don’t have a noodle maker, I only have the peeler and the noodles turn out great;
- grind the sesame seeds into a pasta (tahini);
- slice the bell pepper, tomatos and avocado;
- put the grinded sesame seeds and sliced vegetables into a blender and blend to a homogenous sauce;
- pour the sauce over the noodles and enjoy.
Be careful with the sesame seeds – don’t put too much. Firstly, because the meal would become too fatty and thus »break« the rules of natural hygiene and the 80/10/10 ratio, second, too much of it adds bitterness to the taste of te sauce. Tip: you can switch sesame for sunflower seeds to avoid a potential bitter taste altogether.
