An original vegan recipe.
Ingredients (for 2 people):
– 200 g of dry white beans
– a tablespoon of olive oil
– red pepper
– 2 tomatoes
– half a lemon
– pepper
– fresh or dry sage, up to 10 leaves
We can use canned beans, but dry is much better, because canned contains far too much salt.
Soak the beans the evening, or at least 5 hours, before you intend to cook it. Important – pour off the water in which the beans were soaked. Boil in an economic pot for half an hour max (if it has been soaked overnight, if less, then boil about 15 min longer). Save the water in which the beans were cooked in case it needs to be added during cooking later.
Heat the oil, add the chopped peppers and tomatoes, a pinch of salt (only if you use soaked beans) and fry so that peppers and tomatoes get a bit softer. Add the boiled beans, juice of half a lemon, pepper, first half of the sliced sage leaves.
Stew for about 10 minutes. If there is not enough water, add the water from before, in which the beans were boiling. Add the other half of the sliced sage leaves.
Use as a side or as an independent dish. Can be served with bread or bruschette.
