However, you might be struggling to find a great chocolate cake recipe if you’re vegan. After all, it’s hard to find great vegan options out there for chocolate cake, and store-bought options either end up tasting strange, or they’re dry.

Fortunately for you, here is a recipe for vegan chocolate cake that’s just as moist, rich, and yummy as any non-vegan option out there. Yes, even the chocolate buttercream is 100% vegan, and yes, it’s undeniably delicious.

  • How can I Keep my Cake Moist?

The secret to keeping your chocolate cake moist is by adding extra water to the cake batter right before baking the cake. It might thin out the batter a little bit, but that’s okay! You’ll still end up with a cake that has great consistency and texture. The water should be boiling hot, otherwise, it could cause the oils in the batter to solidify.

The applesauce in the recipe will also add moisture to your cake. Don’t worry though, you won’t be tasting any apples in your final cake!

  • Can I Make This Ahead of Time?

Yes, just like a regular cake, you can make this cake ahead of time, cool it, and frost it before storing it in your fridge. This cake will keep for around 3-5 days in your fridge. Make sure to cover the cake to prevent it from drying out. 

  • What If I Don’t have Applesauce?

If you don’t have applesauce, you can use whipped aquafaba as a substitute. You can also use 2 flax eggs (made from 2 tbsp. ground flax + 5 tbsp. water). 

  • Can I Make This in Cupcake Form?

Yes, definitely! Just make the batter as directed and pour into cupcake liners. Make sure to only fill them up halfway as the cakes will expand when baked. This recipe will yield around 24 cupcakes.

Vegan Chocolate Cake Recipe

Here’s an easy recipe that you can do with your family or friends.

Ingredients

For the Cake

  • 1 c. almond milk, unsweetened
  • 1 tbsp. apple cider vinegar
  • 2 c. all-purpose flour
  • 1 ¾ c. granulated sugar
  • ¾ c. cocoa powder
  • 2 tsp. baking powder
  • 1 ½ tsp. baking soda
  • 1 tsp. salt
  • ½ cup canola oil
  • 2/3 c. applesauce, unsweetened
  • 1 tbsp. vanilla extract
  • 1 c. boiling water

For the Frosting

  • 1 c. cacao powder
  • 1 ½ c. vegan butter, softened
  • 4 c. powdered sugar
  • 2 tsp. vanilla extract
  • ¼ c. almond milk, unsweetened

Instructions

For the Cake

  1. Preheat oven to 350 degrees F.
  2. Grease two 9-inch cake pans.
  3. Mix together the almond milk and apple cider vinegar. Stir, then set aside to allow to curdle.
  4. In a large bowl, mix together the flour, granulated sugar, all-purpose flour, cacao powder, baking soda, baking powder, and salt. Whisk until well-combined.
  5. Mix the curdled almond milk, applesauce, and oil into your dry ingredients. Whisk until a smooth batter is formed.
  6. Slowly pour in the boiling water, mixing until the water is incorporated into the batter.
  7. Divide the cake mix into the pans evenly.
  8. Place into pre-heated oven and bake for 30 minutes. When the cakes are done, test for doneness by inserting a toothpick into the center. The toothpick should come out clean.
  9. Allow to cool completely before frosting. 

For the Frosting

  1. Sift cocoa power into a large bowl to remove any clumps.
  2. Add softened butter and mix well until the cocoa powder and butter have been creamed.
  3. Add half of the almond milk and half of the powdered sugar. Mix well until all the ingredients are combined, and no lumps are seen. Repeat with the remaining almond milk and powdered sugar. 
  4. Frost the cake as desired.
